Penelitian ini bertujuan kestabilan warna daun jambu deli madu hijau sebagai pewarna alami. Lama waktu ekstraksi dan pH digunakan sebagai perlakuan terhadap zat warna daun. Penelitian ini merupakan penelitian eksperimen. Sampel yang digunakan dalam penelitian ini adalah daun jambu Deli HIjau (Syzygium samarangense (Blume) Merr. & Perry). Alat yang digunakan untuk adalah Spektronik. Hasil penelitian ini menunjukkan bahwa waktu maserasi optimal untuk daun jambu Deli HIjau yaitu selama 12 jam. Kemudian diperoleh data pH dimana naik ketika asam dan kemudian turun ketika normal dan naik lagi ketika basa.
